It’s hard when you have crap possession and play one up rugby. It’s really obvious to the defence they only need to worry about one attacker.

If you run in pairs it holds the defence back and commits less players. If you play off the half back it allows you to hit the B C defenders who will likely be more spread out than the compact A and B.
